Chili peppers can be stored for approximately 1-2 months in a cold storage facility and approximately 3 months in a controlled atmosphere (CA) cold storage facility. Comparatively, CA cold storage offers advantages, as chili peppers stored in CA have a longer shelf life and retain freshness for about a week longer after being removed from the cold storage compared to cold storage.
III. Chili Pepper Preservation Technology: Storage Precautions
1. During storage, chili peppers must be protected from moisture and mold. Mold is a common phenomenon, and fluctuations in storage temperature can cause condensation, increasing humidity in the cold storage and promoting mold growth.
2. Regularly check the chili peppers during storage; remove any rotten or damaged fruit.
3. When sealing chili peppers with plastic film, use an ethylene adsorbent to remove ethylene. Currently, a common ethylene adsorbent used in production is perlite bricks as a carrier, which adsorbs potassium permanganate to create the ethylene adsorbent.
